Is a soft cheese made using select, top quality milk, matured for over 60 days. During the maturing stage, the cheese is washed with water and turned twice a week. Crucolo cheeses made using this technique have an exceptional, incomparable mild-piquant-spicy flavour.

This cheese shares its characteristics with “Il più saporito”. However, it is only matured for approximately 30 days, which gives it a creamy, delicate, buttery and “mild” taste.
